Asian carp has overtaken the Mississippi River System threatening the ecosystem, as well as multi-million dollar recreational and commercial fishing industries.
Asian Carp, rebranded as Silverfin, is a fish everyone can learn to love. To ensure the survival of native species, Chef Phillipe Parola is working with Louisiana and Illinois to find a solution for the rapidly growing problem of the invasive fish – “If you can’t beat them, eat them.”
Louisiana Chef Philippe Parola has had his eye on the Asian carp situation in Louisiana for several years, and he is not shy about expressing his worry and frustration over the slow bureaucracy of addressing what he sees as a serious threat to the ecosystem and the state’s multi-million dollar recreational and commercial fishing industry.
